- 180 g lean beef steak
- 250 g baked sweet potato
- 100 g mixed vegetables
- 5 g herbs, spices and lemon

Method
- Pat the 180 g lean steak dry, season with salt and pepper and leave it at room temperature for 15 minutes.
- Bake a 250 g sweet potato at 200 °C for 40–45 minutes (or microwave for 6–8 minutes) until soft.
- Sear in a very hot pan for 3–4 minutes per side for medium (57–60 °C). Rest for 5 minutes and slice against the grain.
- Steam or sauté the 100 g mixed vegetables for 3–4 minutes, or serve them raw if they're salad vegetables.
- Build the plate: the baked sweet potato first, the Lean Beef Steak on top and the vegetables alongside. Finish with the remaining herbs and a squeeze of lemon.
